          There are many people love to have dessert both childern and adults because dessert make people enjoy and be happy when eat it.  In the opposit way if people have dessert over than the body needs it will effect to the health due to almost of dessert make from sugar and flour.

          Both of  Thai dessert or any kind of dessert if the consumer consume to much it can bad effect to body therefore, if people do not know the quantity to eat it not good for health.   Many people prefer to eat dessert  but  do not try to exercise effect to them caries which often found in the childern, fat in adult.  Finally, somebody who love to eat dessert have an illness because it become the toxic and accumulate in their body.  An illness that often met in childern such as caries and obesity same as the adult but have another illness such as Diabetes, Embolism and Hypertension..

          Each dessert make from different ingredient for example; Thai dessert often make from flour, sugar and egg.  Western dessert often make from flour, sugar or glucose, egg, cream or butter and cheese.  If use many ingredients to make it mean the capability of body to burn difficult more.

          Kleeb Lam Duan dessert similar to other dessert, if eat a lot not good for health but Kleeb Lam Duan dessert has a special quality that less sweet than other dessert.  Everyone can eat Kleeb Lam Duan or another dessert just select time to eat and not a lot of quantity and require to exercise.

          Thai dessert occur since long time ago and invent by Thai ancestor.  There are a lot of Thai dessert which different taste, ingredient and cooking, some kind use egg to be the ingredient that we think it is not the ingredient to cook dessert but it can.  Thai dessert often use in different ceremony such as wedding, some religion ceremony, some tradition and some dessert use in the palace tradition.

          Thai dessert divide the kind of dessert follow the method of cooking.  The first kind of Thai dessert is steamed.  Steamed is using the heat to make the bread cooked by use the steamer which the top class is the colander for put the bread and the below class for boil the water.  Thai dessert than make from steamed method such as Kanom Tarn.

         

          The second or bake is stirring is bring the liquid to mix until it be hamogeneous and sticky.  Thai dessert that use this way to cook such as Kanom Peakpoon and Kamom Takoh.

          The third kind is candy.  Almost candy will be candy the fruits such as banana candy by boil the water with sugar then bring fruit in to the syrup until fruit as mellow.  The dessert make from candy method can be keep for long time such as banana candy, fracture candy and pumpkin candy.

          The fourth kind is boiling  by use the coconut milk is the main ingredient next, add sugar and a few of salt and add the ingredient that we need such as dough or any fruits then,  boiled until as mellow.  Thai dessert that use boiling method to cook such Bua Loi and Kao Tom.

          The last kind is fry.  This kind of dessert is fried the ingredient in the pan that heat oil until it ripe.  Thai dessert the use fried method such as Banana fried and Dok Jok.

          There are many kind to do Thai dessert which different and have a charm in its self.  Kleeb Lam Duan is one kind of Thai dessert was arrange in bake kind.

          Kleeb Lam Duan is one of Thai dessert which Thai people believe that it is good meaning and often use in wedding.  The meaning of Kleeb Lam Duan is to famous and another is to build the splendor of life.  The reason of this meaning is due to this kind of dessert similar to Kleeb Lam Duan flower which there are three petal and the carpel is in the center.  This dessert cook from dough and baked with candle smoke therefore, Kleeb Lam Duan has a good taste,  sweet and good smell.  For me, I very love Kleeb Lam Duan dessert but difficult to buy it because less of people can do this dessert.

          Kleeb Lam Duan famous in the past but now less people know it.  We will see it in a classic city that be a tourist’s attraction such as Petburi, Hua – Hin, Prachuabkirikhan.  It suit for be a gift for important person or lover because it can keep longer time than another kind of dessert for one month.

          Nowadays, some Thai traditions lose and leave our Thai culture because of environment change such as time, people, culture change, and technology.  Time change occur new generation replace old generation and but some traditions was not relay to new generation or relay but not all right.  People in the present often hurry on their daily life so they not concern to the rite of each tradition but concern to the easy way and save time.  Thai people get some things from western culture and it is influence to their daily life such as food, culture and dresses.  Technology is the one thing that make people convenience more and carelessly.

          In the past Kleeb Lam Duan was used in important tradition such as wedding ceremony because Thai people believe it good meaning and beautiful suit for wedding and give a good feeling.   My friend, she will get marry soon and she ask me to help her to decide whether use cupcake or Kleeb Lam Duan in her wedding.   When I compare two deserts, Kleeb Lam Duan is more advantages.

  

   

     For one thing, select cupcake the expenditure more than Kleeb Lam Duan because cupcake is high cost and when order the amount must be enough.  For another, Kleeb Lam Duan very beautiful, good meaning, cheaper and lower cholesterol than cupcake.  For the last thing, Kleeb Lam Duan is Thai ancient desert if use Kleeb Lam Duan it help to inherit Thai culture but cupcake from western culture.

          So, for my friend wedding, she select Kleeb Lam Duan to compose Thai traditional wedding.  It is a good thing that we should do it correctly follow our ancestor and can be the good example to other person.  I always prefer this kind of desert.

Some of my friends have heard I’m interesting in Kleeb Lam Duan desert then, they wonder “what is Kleeb Lam Duan?”  Somebody confuse and somebody do not believe whether it really have. So I told them whether it is Thai dessert and was cover for long time ago but Thai new generation do not know it.

          One obvious true is Thai people in the present do not like to consume Thai dessert but they like to consume another dessert which come from western culture such as doughnut, cookie, cake so it direct effect to Thai dessert willing loss.  When without consumer mean do not have buyer then, Thai people cannot do it was a business like in the past.  Therefore, nowadays it is difficult to find out Kleeb Lam Duan or people who can do this Thai dessert. 

          Last of all, Kleeb Lam Duan still alive but I’m not sure it will be gone as soon.  Now we can find out it in important ceremony or shop which it is tour destination.  So I would like to promote this desert to every Thai people help to consume Thai product for preserve a beautiful culture to next generation and to preserve Thai entity.

            Kleeb Lam Duan is the Tahi dessert was found for long time ago and it is the unique dessert because its design look like Lam Duan flower and baked with candle smoke which not easy to cook it.  Therefore in this blog I would like to write about how to cook Kleeb Lam Duan dessert.

            Before go to the step to do Kleeb Lam Duan, must be survey and prepare the equipments and ingredients.

            For equipment as follow :

                        - Oven

                        - Dessert tray

                        - Flour sieve

                        - Measuring cup

                        - Measuring spoon

            For ingredient as follow :

                        -Sift flour        3  cups

                        - Oil                 ¾  cup

                        - Icing sugar    1½  cups

       

                The first step is flour cooking that admix the dough with icing sugar after that  gradually add water and simultaneously thresh flour to be homogeneous. 

            Next is the flour molding that mold the petal part which mold the flour seem the Lam Duan petal for 3 petals per each flower and mold the round flour to be the pollen in the center then, compound each piece to be the flower pattern, after that arrange each flower dessert into the tray.  Finally, baked it until ripe and bring it into the bottle and baked with candle smoke then finish.

            Kleeb Lam Duan can keep for long time and be the dessert for eat every time   It good taste, good smell and very joyously when eat it.  When the ceremony or festival comes it can be the gift for the lovers and the relatives.
